This hands-on course is designed to provide you with everything you need to start baking your own sourdough loaves from home.
You'll receive step-by-step guidance on how to mix, develop, and shape your first sourdough loaf. You'll also learn how to maintain your sourdough starter, ensuring you can bake fresh loaves at any time. With comprehensive notes and ongoing troubleshooting support, you’ll feel confident in continuing your sourdough journey long after the course ends.
The class includes demonstrations of the baking process, the use of essential baking tools, and a chance to sample freshly baked sourdough, making it an enjoyable and informative introduction to the world of sourdough bread making.
No previous knowledge or experience is required. This course is suitable for absolute beginners as well as those with some experience of sourdough baking.
Course Structure
During this hands-on session, the tutor will provide step by step instructions and a demonstration of how to make a standard white sourdough loaf. Topics will also include:
• Explanation of how different types of sourdough breads are made.
• Demonstration of the baking process with pre-prepared loaves.
• Thorough explanation of how to maintain a sourdough starter (supplied).
• Explanation and demonstration of the use of various baking utensils.
Recipes for several sourdough breads will be provided, and you will have the opportunity to sample pre-prepared loaves baked on the day.
The tutor will also have various baking utensils available for sale.

Steve Koschella has been teaching at WEA since 2022.
Formerly employed in the baking industry, Steve became interested in sourdough during the COVID-19 lockdowns in 2020. He developed his skills and after a few months began selling his bread locally. He soon developed an in-home course to teach his skills to others, and now teaches face-to-face courses at WEA.
Steve’s sourdough baking courses have become very popular and he enjoys excellent ratings from his students.
