Increasing numbers of people are sober and 'sober curious'. Learn how to make three alcohol-free drinks; one for gut health, one using edible weeds and flowers from your backyard, and one just for FUN! In this hands on workshop, participants are invited to make all three drinks while learning about the nutitional benefits and the science behind each creation. Gut health-based on kimchi (chili or tumeric), with other prebiotics and probiotics (savoury flavour). Edible weeds and flowers (sweet/neutral flavour). Unicorn's Tears-changes from blue to pink right in front of your eyes (sweet/neutral flavour). Sarah Hennessy is Founder of Memorable Mocktails, SA's first Mocktail and alcohol free wellness school. With a background in brain health and foraging, Sarah has been creating healthy drinks for two decades.

Course Description

Shake things up with this fun and practical hands-on workshop that blends creativity with nutritional know-how. 

In this interactive session, participants will craft three unique alcohol-free drinks, each built around a different health theme. Along the way, you’ll dive into the science behind the ingredients, explore their health benefits, and learn how to create delicious drinks that are as nourishing as they are eye-catching. 

Whether you're sober-curious or just want to add something vibrant and healthy to your drink repertoire, this workshop has something for everyone.

Each mocktail tells a story:

Unicorn’s Tears explores antioxidants and colour-changing chemistry with ingredients like pomegranate and blue pea flower.

Love Ya Guts delves into gut health, prebiotics, probiotics, and the powerful connection between the gut and the brain.

Forage and Fossick invites you to connect with nature by identifying and tasting edible weeds and flowers. Bring your own backyard finds (vetted by the tutor), test your plant ID skills with ten mystery samples, and compete for a prize!

This course isn’t anti-alcohol. It’s pro-fun, pro-flavour, and packed with nutritious, beautifully-crafted alternatives. Each participant will receive a take-home gift of dried blue pea flowers and a recipe card to recreate Unicorn’s Tears at home.

Course Structure

This engaging and interactive session is designed to inspire creativity, deepen knowledge, and spark conversation around health-conscious drink alternatives:

We’ll begin by sharing the story behind Memorable Mocktails and inviting participants to introduce themselves, share their motivation for attending, and what they hope to gain from the experience.

As a group, we'll explore the growing movement toward sobriety and the rise of the ‘sober curious,’ discussing the social and health trends driving this shift.

Participants will then learn how to make three distinct alcohol-free drinks. You'll be encouraged to get creative and put your own personal twist on each mocktail to suit your individual tastes.

Alongside the drink-making, we’ll dive deeper into the health themes and science behind each recipe, from antioxidants to gut health to local foraging.

A hands-on exploration of ten edible weeds and flowers will follow, complete with tasting opportunities. For those feeling competitive, there will be a fun plant identification quiz with a prize for the top scorer.

Throughout the session, there will be plenty of time for questions, discussion, and shared discovery.

Course Learning Outcomes

By the end of the session, participants will be able to:

  • Make three alcohol-free drinks at home
  • Identify at least five edible weeds and flowers from their backyard or local area
  • Understand the role of edible weeds and flowers in supporting food security in Australia
  • Describe the nutritional benefits of probiotics and prebiotics
  • Gain an introductory understanding of gut health and its links to dementia and mental health
  • Know where to source ingredients for their mocktails.

Course Requirements

Students are invited to bring in samples of edible weeds and flowers that they have found in their backyards and neighbourhoods.  All samples will be thoroughly vetted by the tutor.

Your Tutor is Sarah Hennessy

Sarah commenced at the WEA in 2025.

Sarah is Founder and Director of Memorable Mocktails, SA's first Mocktail and alcohol free wellness school.

She provides workshops on reducing the risk of developing dementia and also catering.

With a background in brain health and foraging, Sarah has been creating healthy drinks for two decades.

Sarah was a trainer at Alzheimers Australia SA (now known as Dementia Australia) and also state coordinator of the Dementia Risk Reduction program.
