Gain techniques to produce realistic flowers and other decorations using sugar-paste. $25 kit is to be purchased from the tutor and payable at the first session. Other materials and ingredients required will need to be purchased and could cost up to $25.

Cake Decorating for Special Occasions

Course Description

There’s something truly special about creating a cake with your own hands – especially when it’s for a meaningful occasion. In this hands-on course, you’ll learn the foundational skills needed to decorate a beautiful, personalised cake using fondant and delicate sugar flowers. 

Whether you’re preparing for a birthday, anniversary, or other special occasion, this course will guide you through the rewarding process of crafting a cake that’s both visually stunning and full of heart.

Starting with the basics, you'll make your own modelling paste and learn to create elegant frangipani, roses, and leaves. As the course progresses, you’ll bring your creations to life by colouring your flowers, covering your cake in smooth fondant, and mastering the finishing touches. 

In the final session, you’ll assemble your cake – adding your handmade flowers, a ribbon, and a personalised greeting. By the end, you’ll not only have a beautiful cake to be proud of but also the skills and confidence to decorate for any future special event.

Course Structure

The course will progress through the following topics:

Week 1: you will learn to make sugar paste and create frangipani flowers and buds.

Week 2: you will colour the frangipani and make roses and leaves.

Week 3: you will colour the roses and leaves and cover the cake with icing.

Week 4: you will decorate the cake using your handmade flowers, then add a ribbon, a written greeting, and a decorative border around the base.

Course Learning Outcomes

By attending this course students will:

  • Learn to make and work with modelling paste
  • Create and colour sugar flowers including frangipani, roses, and leaves
  • Cover a cake smoothly with fondant
  • Assemble and decorate a cake with flowers, ribbon, and a written greeting
  • Gain confidence in decorating cakes for special occasions

Course Requirements

A kit is to be purchased from the tutor for $25 at the first session. Cash only please, there are no EFTPOS facilities available.

Students will also be required to bring the following materials and equipment. More specific details will be provided in class.

Week 1, please bring:

  • Cornflour
  • Paintbrush – size 1 or 2 from Cheap as Chips
  • Plastic placemat – please make sure it’s washable)
  • Gladwrap
  • 500g icing sugar – please bring pure icing sugar, not icing mix
  • 1 egg
  • Copha
  • Glass bowl – small
  • Small straight nail scissors
  • 1 teaspoon
  • 1 dessert spoon
  • 1 fork
  • 1 flat bladed knife    
  • Egg carton
  • Tea towel or hand towel

Week 2, please bring the kit purchased in week 1, plus all other items from week 1 except the egg, bowl, fork, and icing sugar.

Week 3, please bring all items listed on page 3 of the notes provided in week 1, plus the kit purchased in week 1, plus flowers. More details will be provided in class.  

Week 4, please bring:

  • Cake
  • All flowers
  • 1 metre ribbon 5-25 mm wide, not paper or wired
  • 1 mix of royal icing

Your Tutor is Pamela Lane

Pamela Lane has been teaching at WEA since 2004. 

Pamela Lane has been decorating cakes since 1981, and a member of the Cake Decorating Association of South Australia since 1982.

During her many years in the industry she has been a competitor, judge, demonstrator and tutor for countless events and competitions at state and national level, and has attended many classes and seminars to learn her craft and hone her skills.
