Discover the art of alcohol-free mixology in a fun and inclusive workshop with Memorable Mocktails. This hands-on class will guide you through creating beautiful mocktails that look as good as they taste. During the workshop, you’ll learn how to balance flavours, play with textures, and use natural ingredients like herbs, syrups, and botanicals to craft drinks that impress. We’ll explore garnishing techniques, colour-changing ingredients, and presentation tips so your mocktails are not only delicious but also Instagram-worthy. Your facilitator will show you foraged plants she has picked from her garden to create your own bespoke Wild Botanicals Lemonade. Dandelions, lilly pilly berries, lavender, sow thistle and soursobs are just some of the ingredients we may use to create a memorable alcohol-free delight. No experience is needed - just bring your curiosity and love for creativity! You’ll be guided step-by-step, with plenty of room to experiment and make each drink your own. By the end of the session, you’ll walk away with new skills, recipe inspiration, and a deeper appreciation for the beauty of non-alcoholic drinks.

Course Description

Discover the art of alcohol-free mixology in a fun and inclusive workshop with Memorable Mocktails. This hands-on class will guide you through creating beautiful mocktails that look as good as they taste.

During the workshop, you’ll learn how to balance flavours, play with textures, and use natural ingredients like herbs, syrups, and botanicals to craft drinks that impress. 

We’ll explore garnishing techniques, colour-changing ingredients, and presentation tips so your mocktails are not only delicious but also Instagram-worthy.

Course Structure

This engaging and interactive session is designed to inspire creativity, deepen knowledge, and spark conversation around health-conscious drink alternatives:

We’ll begin by sharing the story behind Memorable Mocktails and inviting participants to introduce themselves, share their motivation for attending, and what they hope to gain from the experience.

As a group, we'll explore the growing movement toward sobriety and the rise of the ‘sober curious,’ discussing the social and health trends driving this shift.

Participants will then learn how to make three distinct alcohol-free drinks. You'll be encouraged to get creative and put your own personal twist on each mocktail to suit your individual tastes.

Alongside the drink-making, we’ll dive deeper into the health themes and science behind each recipe, from antioxidants to gut health to local foraging.

A hands-on exploration of ten edible weeds and flowers will follow, complete with tasting opportunities. For those feeling competitive, there will be a fun plant identification quiz with a prize for the top scorer.

Throughout the session, there will be plenty of time for questions, discussion, and shared discovery.

Course Learning Outcomes

By the end of the session, participants will be able to:

  • Make three alcohol-free drinks at home
  • Identify at least five edible weeds and flowers from their backyard or local area
  • Understand the role of edible weeds and flowers in supporting food security in Australia
  • Describe the nutritional benefits of probiotics and prebiotics
  • Gain an introductory understanding of gut health and its links to dementia and mental health
  • Know where to source ingredients for their mocktails.

Course Requirements

Students are invited to bring in samples of edible weeds and flowers that they have found in their backyards and neighbourhoods.  All samples will be thoroughly vetted by the tutor.

Your Tutor is Sarah Hennessy

Sarah commenced at the WEA in 2025.

Your Tutor is Sarah Hennessy (B. Social Science, Cert IV Workplace Training and Assessment, Cert III in Entrepreneurship and New Business, Justice of the Peace)

 Sarah is the Founder and Director of Memorable Mocktails, South Australia’s first mocktail and alcohol-free wellness school. Her new business offers workshops on creating mocktails that are both fun and nutritious. Currently studying herbalism and drawing on a background in foraging, Sarah has been making healthy drinks for more than two decades.

 With extensive experience in health promotion and education, Sarah has worked as State Coordinator of the Risk Reduction Program at Dementia Australia. She enjoys sharing her deep knowledge of how everyday food and drink choices can support general wellbeing.
