SOURDOUGH BREAD MAKING

If you have always wanted to learn how to make sourdough bread but feel a bit intimidated with the idea of creating or looking after a 'starter', or if you are a bit concerned about the complexity or time involved, this course will demystify all this for you. This Sourdough Bread Baking course uses simple, tried and true method of sourdough bread baking that is as easy or easier than typical methods using commercial yeast. Christmas is celebrated on the 24th December in Hungary. Come and learn about the cultural uniqueness and some of the dishes prepared during this time. Join Ilenia, Italian pastry chef from Rome, in this awesome masterclass, where you can learn some of her secret recipes. Perfect cream puffs with chantilly zabaione filling, mono-portion shortbread tarts with ricotta and chocolate cream, crostatine (tarts filled with pistachio frangipane and raspberries). Learn how to make these classic Italian pastries and what you can't eat during class you can take home. A perfect accompaniment with your favourite coffee or tea. CHEESEMAKING BY WOODSIDE CHEESE WRIGHTS

This home cheesemaking and tasting session is brought to you by passionate cheese maker and foodie, Mitchell Lloyd Artisan and Manager of Woodside Cheese Wrights in the Adelaide Hills. Each student will make their own Feta cheese, having the process explained step by step, and given instructions of what to do and how to care for the cheese until ready to eat. Tutor will also demonstrate how to make an Halloumi cheese. You will get to sample 5 Woodside cheeses and be provided with goat feta and various herbs and spices to create your own marinated jar to take home. INTRODUCTION TO FERMENTATION WORKSHOP

Learning to make cultured foods through the fermentation process. Cultured foods provide a way of preserving foods without artificial preservatives, while providing the body with probiotics, enzymes and vitamins to support gut health. Recent research shows that gut health is linked to mood-related disorders, so learning to make and include cultured foods in our daily diet can support our holistic well-being.This workshop is a hands-on process, where participants will learn to make different cultured foods, sauerkraut, kefir & milk yoghurt, yoghurt cheese & apple cider vinegar. Taste-testing is included in the class. Please note that dairy milk is used and may not be suitable for you. Students are required to bring along some of the ingredients and you may wish to contact our Enrolment Office for further details prior to enrolling.

CHRISTMAS COOKIES

Create gorgeous Christmas cookies to adorn your festive table or give as gifts. Use fondant to top your sugar cookies, then get creative with gold paint and edible sugar balls. You will also be taught how to use silicone moulds to create bows and other embellishments. $35 payable to Tutor at the session for kit which includes 6 large decorated cookies (2 baubles, 1 xmas tree, 1 wreath, 1 lg snowflake, 1 gold star). Plus 6 mini cookies (3 stars and 3 snowflakes).

FRENCH MASTERCLASS - MACARONS & BRIOCHE

Discover authentic French recipes with patissier Andre Guerinet, previous owner of Mulots Patisserie. Andre will demonstrate how to make Macarons and two different types of Brioche, including Saucisson as well as individual Brioches. Students will get to fill their own Macarons and to taste and take home as well. Demonstration class with some hands-on.

CHRISTMAS DECORATED CUPCAKES

Kick off the festive season with adorable Christmas themed cupcakes. Your tutor will guide you through the steps to create 6 cupcakes: Santa, Rudolph the Reindeer, a Snowman, Present, Pudding and a Gold Bauble. You will finish off your creations with gold, edible paint. $35 is payable at the session for use of materials and includes a box to take home your cupcakes in and an apron.
